Lisa Sheehan-Smith, Ed.D., RD,

Dr. Sheehan-Smith is an assistant professor in Nutrition and Food
Science. She teaches a variety of courses including:

Dr. Sheehan-Smith completed her B.S. in Dietetics and Institution
Administration at Western Kentucky University, plus her dietetic
internship, a M.Ed. in Science Education, and an Ed.D. in Human
Resource Development at Vanderbilt University. Her research
interests include the factors that affect internal and external
customer satisfaction in healthcare organizations and the
hotel-style room service meal delivery process used by hospitals.
Dr. Sheehan-Smith has worked as an educator with the Dairy Council,
as a health promotion nutritionist and as a manager for hospital
nutrition/food service departments. She currently owns a nutrition
and food service consulting business, Nutrition Innovations.
Dr. Sheehan-Smith is active in the state and district dietetic
associations. She frequently gives interviews to area newspapers and
television stations, and makes presentations to professional as well
as consumer groups.
